Who says gluten-free vegans miss out on all the fun?! I certainly don't! While I may have to get a little creative to satisfy that sweet tooth, delicious guilt-free desserts that fit my dietary restrictions are definitely possible. Here are my top 4 go-to desserts. Enjoy!
- Apples or Bananas with Melted Peanut Butter and Dark Chocolate Chips. I like to use organic Pink Lady apples; they're the perfect balance of sweet, sour and crisp! Simply wash and slice the apple and drizzle with melted organic peanut butter and vegan dark chocolate chips using a small spoon. Tip: Leave a few chunks of chocolate chips when melting for an extra crunch with every bite ;)
- A Scoop of Coconut Ice Cream with Frozen Raspberries. This brand is my favorite. Tip: Sprinkle a teaspoon (or two) of shredded coconut and dark chocolate chips on top for an extra treat.
- Protein Balls. While not a traditional dessert, they definitely satisfy my sweet tooth with their peanut butter goodness. Check out our personal recipe here.
- Fair-Trade Dark Chocolate. A couple pieces of dark chocolate after a meal not only satisfies my sweet tooth but also helps curb late-night hunger. My favorite brand is endangered species chocolate. They are fair-trade, NON-GMO, gluten-free, and vegan, and they also donate 10% of their profits to non-profits that protect and preserve wildlife - doesn't get much better than that! They have a variety of bars to choose from but I prefer the one with cacao nibs. Tip: For an extra treat, layer two pieces with a spoon of peanut butter and press together to make a peanut butter chocolate sandwich.
